JR’s Bolognese … finally! 🙌🏻

Dear Friends,

Welcome to the beautiful Hilton Head home of our good friends, Leslie and JR Richardson! Together we enjoyed a wonderful evening of friendship in the kitchen and around the table with Hester and Bob Hodde, also long-time friends.

You may remember JR from the Cosmos video we did with his daughter, Forest from their home in Linville a summer or two ago … my, now time flies! With this newsletter and the videos you’ll find on Instagram, we bring you JR’s fabulous Bolognese recipe. I featured this recipe on an Instagram post when I made it some time ago. Many of you asked for the recipe and you are going to absolutely love this dish!

JR’s Bolognese can be served for any occasion. It works for the most casual to the most elegant gatherings and I’d serve this in any season. Best of all … it’s effortless! I promise you will not believe how easy this is to prepare and how it tastes even better if you prepare in advance. Add a salad and hearty bread. Bon Appetit!

JR’s Bolognese

Yields ~6 quarts    JR Richardson

INGREDIENTS

1 lb bacon
1 yellow bell pepper, diced
1 large sweet onion, diced
1 carrot, shredded
3 stalks celery, chopped
2 cloves garlic, minced
3 lbs Jimmy Dean hot sausage
3 lbs chuck ground beef
2 28-oz can crushed tomatoes, preferably San Marzano
2 6-oz cans tomato paste
1 bay leaf
1 tbsp oregano
1 tbsp basil
1 tsp garlic salt
Dash cinnamon, optional
1 cup red wine
I cup beef stock
5 tbsp heavy cream
Salt and pepper to taste
Parmesan cheese, freshly grated
Tagliatelle or Fettuccine pasta

DIRECTIONS

In a large pan cook bacon. Remove from pan, crumble, and transfer to large stock pot or Dutch oven. In reserved bacon grease sauté over medium heat yellow pepper, onion, carrot until tender, 6 – 8 min. Add garlic and sauté additional min. Add this mixture to bacon. 

In the same pan, brown sausage and ground chuck. Add to bacon and vegetable mixture. 

Add crushed tomatoes, tomato paste and seasonings. Stir to mix over medium heat. 

Add heavy cream and red wine. 

Continue to heat over medium-high heat. Once Bolognese begins to boil, reduce heat to simmer. 

 


Hester’s “Go To” Vinaigrette

Yields ~1 cup        Hester Hodde

INGREDIENTS

¼ cup balsamic vinegar
1 tbsp Dijon mustard
½ tbsp honey
1 lg garlic clove, minced
½ cup olive oil
Salt and pepper

DIRECTIONS

Whisk all ingredients except olive oil, salt, and pepper until fully emulsified.

Slowly whisk in ½ cup EV Olive Oil and add salt and pepper to taste.

For gluten pastas, consider Jovial. I love this company and feel their products are superior to many other gluten and grain-free products on the market. You can order online or I can often find at my local grocery store.

Cut Resistant Gloves

One of my favorite finds is the Kirkland Parmigiano Reggiano at Costco both for it’s authenticity, quality, and price. Americas Test Kitchens also gives it their stamp of approval. One more tip … don’t throw the rind away! Add it to the bolognese or freeze for future stews and soups. YUM!

Be sure when grating cheese, you use my steel mesh gloves to protect your hands.

Cheese Storage Bags

To store your cheese, consider the Formaticum Cheese Storage Bags to keep your cheese fresh longer.

Meat Chopper

If you’re unable to find the crushed San Marzano tomatoes, buy the whole tomatoes and crush in the pot with one of my favorite kitchen tools. This tool is also perfect when browning sausage and hamburger meats.
