I don’t know how EE could make it any easier for you to serve a delicious summer hors d’oeuvre. When I go to the beach next week with my sister, we will make this in the time it takes to make a late afternoon cocktail to enjoy with it. Toes in the sand, drinks in hand, and our favorite beach bites.

Cucumber Dip
Serves 8–10 Charlotte Cooks Again, Charlotte Latin School

INGREDIENTS
8 oz cream cheese, softened
½ cup grated peeled cucumber, ~1 English or 2–3 small
¼ cup grated Vidalia onion
¼ tsp pepper
⅛ tsp salt
DIRECTIONS
Mix all ingredients.
DEEDEE’S NOTES
- Recipe may be prepared earlier in the day. Cover and chill.
- Serve with crisp crackers.
