My Mother’s Hummus

Yields ~1 quart 

INGREDIENTS

2 can chickpeas, drained,
reserve liquid from one can
1 cup sesame tahini
3 – 4 cloves garlic, minced
¼ – ½ cup lemon juice
Salt
Olive oil

Mixed Lettuces with Sherry Vinaigrette

SERVES 6–8          Darren Atkins

INGREDIENTS

1 med shallot, minced
2 tbsp sherry vinegar
1 tbsp lemon juice
1 tsp Dijon mustard
9 tbsp olive oil
Kosher salt and
freshly ground black pepper
6 – 8 cups mixed lettuces, your choice
